Green Onion Drop Biscuits

2 cups flour

2 tsp baking powder

1/2 tsp salt

1/4 tsp soda

3 Tbsp vegetable shortening

1/4 cup finely chopped green onions

1 cup buttermilk

cooking spray

Preheat oven to 400 degrees.  Combine first four ingredients in a large bowl; cut in shortening with a pastry blender or 2 knives until mixture resembeles coarse meal.  Stir in green onions.  Add buttermilk, stirring just until flour mixture is moist.  Drop batter by heaping tablespoons onto a baking sheet coated with cooking spray.  Bake for 15 minutes or until lightly browned.  Yields 16 biscuits.

Tip:  Use food processor to combine dry ingredients and shortening.  Pulse a few times until the mixture is the size of peas.  Plain yogurt may be used as a substitue for the buttermilk. 

 

Green Onion Salad

2-3 bunches green onions, chopped

2 hard cooked eggs, peeled and chopped

1 cup mayonnaise

1 sleeve of saltines crackers, crushed

Toss together the green onions and eggs untl blended.  Stir in the mayonnaise.  Carefully stir in the crackers until well coated.  Serve immediately so the crackers don't get soggy.  Serves 6. 

 

Radish Salsa

8 radishes

2 Tbsp cilantro, chopped

1/2 red onion, finely chopped

1 tsp minced ginger root

Juice of 1/2 lime

1 Tbsp olive oil

Place radishes in a food processor and chop until fine.  Combine all ingredients in a bowl, chill and serve. 

 

Scottish Cream of Radish Soup

4 to 6 cups radishes, sliced

1 cup onion, chopped

2 Tbsp butter or margarine

3 Tbsp flour

2 Tsp additional butter or margarine

3 cups low fat milk, warm

2 tsp salt

1/4 tsp pepper

1 tsp ground nutmeg

In a skillet, sauce onions and radishes in 2 Tbsp butter or margarine until both are limp.  Put vegetables in a blender or food processor until smooth.  In a medium pot, melt the remaining 2 Tbsp butter or margarine, stir in flour and cook over low heat, stirring constantly for 2 minutes.  Add milk all at once and bring to a boil, stirring.  Reduce heat and stir until thickened.  Add vegetables, salt, pepper and parsley.  Makes 6 servings.
