Pleasing Potatoes

Rosemary New Potatoes

1/4 cup olive oil

1 Tbsp dijon mustard

2 cloves garlic, sliced

1 1/2 tsp paprika

1/4 tsp salt

1 Tbsp rosemary

2 pounds new red potatoes, cut in half or quartered if large

In a blender or food processor, combine oil, mustard, garlic peprika, and salt; process until smooth.  Add rosemary; pluse on and off just until blended.  In a large bowl, combine potatoes and oil mixture; toss to coat.  Arrange in an even layer in 13 x 9 baking pan.  Bake, uncovered, at 400 degrees for 1 hour or until tender and lightly browned, stirring occasionally.  Makes 4 servings.

 

Garlic New Potates

1 3/4 cups chicken broth

2 cloves garlic

4 cups potatoes

Wash and half or guarter potatoes so they will be simular in size.  Heat broth, garlic and potates in a 3 quart saucepan or medium high heat to a boil.  Reduce heat to low.  Cover and cook for 15 minutes or until potatoes are tender.  Drain and serve.  Makes 4 servings.
